The new frontiers of oenologic yeast: how to meet the wine-makers’ needs
The oenologic research has always considered the wine-maker’s satisfaction as its primary aim, whilst the wine-maker himself must figure out his customers’ taste and account for the fickleness of the market. The research carried out on wine yeastsis not exempt from this rule, on the contrary it strives to achieve it with determination and far-sightedness.The purpose of this conference isprecisely to realize in what direction the applied research in Italian and International laboratories is moving. In particular, we will try to understand the selection criteria to be applied to the yeasts of Tomorrow.
