The new frontiers of oenologic yeast: how to meet the wine-makers’ needs
The oenologic research has always considered the wine-maker’s satisfaction as its primary aim, whilst the wine-maker himself must figure out his customers’ taste and account for the fickleness of the market. The research carried out on wine yeastsis not exempt from this rule, on the contrary it strives to achieve it with determination and far-sightedness.The purpose of this conference isprecisely to realize in what direction the applied research in Italian and International laboratories is moving.In particular, we will try to understand the selection criteria to be applied to the yeasts of Tomorrow.

Wine-growing like all agricultural cultivations progresses following the innovations originating from the research community.This session is devoted specifically to the vine. Innovations concerning new varieties will be discussed, in view of the recent diffusion in Europe of disease-resistantvarieties. Furthermore the management of the vine employing machinery and cultivation models related to precision agriculture will be illustrated.
